Stuffed Avocado

Ingredients

  • 3 tbsp. avocado oil
  • 1 kg chicken breast fillets
  • 3 tbsp. mexican spice mix (Recipe below)
  • 4 avocados, pips removed
  • sour cream dressing (recipe below)

Mexican spice

  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp crushed red pepper flakes
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ¼ tsp ground cinnamon

Salsa

  • 3 tomatoes, chopped
  • ½ onion, finely chopped
  • 1 tbsp. lime juice
  • 1 tsp coriander, finely chopped
  • ¾ tsp salt (or to taste)

Sour Cream Dressing

  • 250 ml sour cream
  • 1 tbsp. coriander, finely chopped
  • 3 tbsp. mayonnaise
  • 1 tsp garlic, crushed
  • 2 tsp lime juice
  • Salt and black pepper to taste

Instructions

  • Mix all the spice mix ingredients.
  • Season the chicken fillets with the spice mix ad set them aside.
  • In a pan, heat the avocado oil.
  • Add chicken to the pan and cook until golden brown and cooked through.
  • Allow the chicken to cool slightly then dice it into bite-size pieces.
  • While the chicken is cooling, mix all the salsa ingredients and set aside. Mix the sour cream ingredients and set aside.
  • Stuff the chicken into the avocado.
  • Top with salsa and the sour cream dressing.
